Amoy dark soy sauce, honey, chilli and garlic poured over salmon and either oven baked or wrapped in parcels and cooked on the BBQ.

Ingredients
1 1/2 tbs p runny honey
10 g root ginger, peeled and finely chopped
1/2 garlic clove, finely chopped
1/2 red chilli, deseeded and finely chopped
150 g cherry tomatoes (handful)
1 courgette, thinly sliced
2 x 150g salmon fillets
1/2 tbs p sesame seeds
Method
  1. Preheat the oven to 220C, fan 200C, gas 7.
  2. Mix together Amoy dark soy sauce with honey, ginger, garlic and chilli.
  3. Place the noodles on an oiled baking tray with the cherry tomatoes and courgettes, top the noodles with the salmon fillets, spoon over the sauce and sprinkle over the sesame seeds.
  4. Bake in the preheated oven for 15 - 18 minutes until the salmon is just cooked.
  5. Serve the salmon with the vegetables tossed through the noodles.
  • Tip: If short on time use pre prepared chopped garlic, ginger and chilli.
