Twice Cooked Pork
We recommend using Amoy Soy Sauce in this recipe.
Ingredients:
400g pork leg – boneless
100g pack choi, cut into strips
1 nugget ginger
1 tablespoon spring onion, plus trimmings for boiling the pork
Vegetable oil
1 teaspoon chilli bean paste
1 teaspoon black bean sauce
1 teaspoon chilli powder
1 teaspoon Shaoxing wine
1 teaspoon Dark soy sauce
80ml/3 fl oz hot chilli (made from veg oil, chilli bean paste, ginger, spring onions, salt, sugar, chicken stock powder)
5g chicken powder
Salt
Sugar
