Twice Cooked Pork

We recommend using Amoy Soy Sauce in this recipe.

Ingredients:
  • 400g pork leg – boneless
  • 100g pack choi, cut into strips
  • 1 nugget ginger
  • 1 tablespoon spring onion, plus trimmings for boiling the pork
  • Vegetable oil
  • 1 teaspoon chilli bean paste
  • 1 teaspoon black bean sauce
  • 1 teaspoon chilli powder
  • 1 teaspoon Shaoxing wine
  • 1 teaspoon Dark soy sauce
  • 80ml/3 fl oz hot chilli (made from veg oil, chilli bean paste, ginger, spring onions, salt, sugar, chicken stock powder)
  • 5g chicken powder
  • Salt
  • Sugar
