Pockmarked Grandmother's Beancurd

Ingredients:
400g bean curd (Tofu)
1 tablespoons vegetable oil
50-60g leeks – green part only
1 teaspoon garlic
1 teaspoon ginger
1 teaspoon black bean sauce
1 teaspoon chilli bean paste
5g light soy sauce
200g fresh vegetable stock
Pinch Sichuan pepper powder
100ml hot chilli oil
2 teaspoons cornstarch – mixed with a little water to loosen
Sugar
Salt
