Pockmarked Grandmother's Beancurd

We recommend using Amoy Soy Sauce in this recipe.

Ingredients:
  • 400g bean curd (Tofu)
  • 1 tablespoons vegetable oil
  • 50-60g leeks – green part only
  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 teaspoon black bean sauce
  • 1 teaspoon chilli bean paste
  • 5g light soy sauce
  • 200g fresh vegetable stock
  • Pinch Sichuan pepper powder
  • 100ml hot chilli oil
  • 2 teaspoons cornstarch – mixed with a little water to loosen
  • Sugar
  • Salt
