Braised Eggplant with Chilli Sauce
We recommend using Amoy Soy Sauce in this recipe.
Ingredients:
800g fresh eggplant
1000g vegetable oil (for deep frying - only using 125g)
2 teaspoons pickled red chilli paste (whole fresh chillies marinated in salt water for 1 month, blitzed and then add veg oil)
50g chopped spring onion
1 teaspoon soy sauce
5g white sugar
15g vinegar
3 teaspoons cooking wine
1 teaspoon mashed ginger
1 teaspoon mashed garlic
½ teaspoon chicken powder
200ml superior soup (a stock made from chicken carcass and lean pork) or veg stock
3 teaspoons cornstarch
½ teaspoon salt
Finely chopped chives, optional
